Healthy & Delicious Breakfast Recipe with Eggs - Shakshuka

What's an Easter without eggs? This Easter, we are bringing you a healthy, delicious and easy-to-make dish called Shakshuka (shak-shoo-kuh). Shakshuka is a Middle Eastern dish that poaches eggs in a rich tomato base with some amazing spices.

We have modified the traditional recipe by adding chorizo and feta cheese to lift up the flavour and texture. This food can be easily serve as breakfast with some buttered toasts or as dinner along with salad or rice! Try it once and you're hooked!

Cooking time: 30-45 minutes


2 tbsp olive oil

3 tomatoes, chopped

1 yellow onion, chopped

3 white button mushroom, sliced

3 garlic clove, peeled and chopped

2 tsp tomato paste 

1 tsp ground cumin

1tsp paprika

1 tsp fresh chopped parsley

3 eggs

50g feta cheese

60g sliced chorizo


Heat up olive oil on pan and add chopped onion. Sauté the onion (2 minutes) until it begins to soften, add garlic and continue to cook for 30 second.

Add chopped tomatoes and mushroom to pan, stir until everything is blended. 

Add paprika, cumin and tomato paste until fragrant and continue to cook until tomatoes soften.

Add chorizo and feta cheese.

Add eggs on top but be sure not to stir the ingredients.

Let the eggs sit for a few minutes until the egg whites are cooked.

Add fresh parsley. Enjoy!
